Better leave the screech until last. True Newfoundland screech will kill you.
Note: If the “tej” you ordered in an Ethiopian restaurant was clear and came in a bottle with a label, you have already tried mead. Next time you have Ethiopian take the waitress aside and ask if they have real tej — it is a cloudy, tangy live culture, traditionally made at home by widows. There are 50,000 people from the Horn of Africa in the DC area, and lots of tej.
